Modelo de alternativa ambiental sostenible y económica rentable para el manejo empresarial de una planta de beneficio animal de categorías III, IV y mínimos

Abstract

El desarrollo de la investigación permitió recalcar la necesidad que las plantas de beneficio animal de categoría III, IV y Mínimos requieren de alternativas ambientales sostenibles y económicas rentables, apoyados de una estructura empresarial definida que minimice los impactos negativos que estos centros generan al medio ambiente. Las alternativas planteadas hacen énfasis en técnicas de producción mas limpia que permite la disminución en los costos y la protección al medio ambiente, además de resguardar la salud de los consumidores, quienes están expuestos a la afectación de enfermedades transmitidas por animales (zoonosis) el cual sus orígenes están inmersos en el proceso de faenado y sacrificio del animal, por ello se determinó la necesidad de aplicar el principio del desarrollo sostenible al proceso. Estas alternativas se definieron a través del estudio de tres plantas de beneficio de muestra en los departamentos de Santander y Cundinamarca que dieron un esquema ambiental, sanitario y económico de la actividad.

The development of the investigation allowed to stress the necessity that the benefit plants animal of category III, IV and Minimums require of profitable sustainable and economic alternatives environmental, supported of a defined enterprise structure that diminishes the negative impacts that these centers generate to the natural resource. The raised alternatives make emphasis in clean production techniques but that allow to the diminution in the costs and the protection to the natural resource, besides protect the health of the consumers, that are exposed to the affectation of diseases transmitted by animals (zoonosis) which their origins are immersed in the process of killed and sacrifice of the animal, for that reason determined the necessity to apply the principle of the sustainable development to the process. These alternatives were defined through the study of three plants of benefit of sample in the departments of Santander and Cundinamarca that gave an environmental scheme, sanitary and economic of the activity.
