dc.description.abstractLactobacillus es el género más grande de bacterias del ácido láctico, es uno de los probióticos más importantes, con 183 especies siendo dominante en los sistemas gastrointestinales, urinarios de humanos y animales, desempeña un papel importante en el mantenimiento y la recuperación de la salud. La producción a escala de bacterias probióticas requiere de varias etapas, entre las que se destacan los procesos de secado y formulación, muchas cepas, no pueden soportar estos procesos, lo que limita su aprovechamiento biotecnológico. Objetivo: Identificar genes relacionados con respuesta a estrés en bacterias probióticas del género Lactobacillus sp. Metodología: Se realizó un estudio descriptivo con una búsqueda sistemática en las bases de datos de PubMed, ScienceDirect, Scielo, Scopus, WOS y el programa AGORA, los resultados fueron tabulados según las variables pH, temperatura. Resultados: Lactobacillus está ampliamente distribuido en el ambiente, evolutivamente este género ha desarrollado mecanismos que le confieren la capacidad de resistir, adaptarse y multiplicarse en condiciones no óptimas del microambiente; la expresión del gen htrA, se ha asociado con la sobrevivencia de Lactobacillus sp en condiciones de estrés por temperatura, y los genes ftsH y el regulón CtsR, se han relacionado con su sobrevivencia en condiciones de estrés térmico y osmótico y ropS que se expresa en la fase de crecimiento estacionaria.spa
dc.description.abstractenglishLactobacillus is the largest genus of lactic acid bacteria, it is one of the most important probiotics, with 183 species being dominant in the gastrointestinal, urinary systems of humans and animals, it plays an important role in the maintenance and recovery of health. The scale production of probiotic bacteria requires several stages, among which the drying and formulation processes stand out, many strains cannot withstand these processes, which limits their biotechnological use. Objective: To identify genes related to stress response in probiotic bacteria of the genus Lactobacillus sp. Methodology: A descriptive study was carried out with a systematic search in the databases of PubMed, ScienceDirect, Scielo, Scopus, WOS and the AGORA program, the results were tabulated according to the variables pH, temperature. Results: Lactobacillus is widely distributed in the environment, evolutionarily this genus has developed mechanisms that give it the ability to resist, adapt and multiply in non-optimal microenvironmental conditions; the expression of the htrA gene has been associated with the survival of Lactobacillus sp under temperature stress conditions, and the ftsH genes and the CtsR regulon have been related to their survival under thermal and osmotic stress conditions and ropS that is expressed in the stationary growth phase.spa
